Dieting doesn't have to mean giving up certain types of food. One thing we love is our Sunday roasts.
We know BELLY OF PORK is a fatty cut of meat, yet throughout our weight loss journey, we continued to eat it. We love our Chinese style spices with this cut of meat too.
The slow cooking process draws out lots of fat, which is then discarded. You are left with a succulent and moist piece of the tastiest part of the pig (in our opinion).

Ribeye steak
RIBEYE STEAK is very flavoursome and can also be very tender. Don't be put off by the fat you can see in the steak either. One of our steaks had more fat (marbling) running through it, and it was the most tender of the two.
There is no sauce with this meal, because the flavour of the steak itself is something to savour.
Sweetcorn is in season at the moment, and it is very sweet and crispy. The cheesy mushrooms were cooked in the frying pan, but you can cook them on the BBQ too.

CHEESE & HAM TOASTIES
LUNCH. Mmmm these cheese and ham toasties were delicious. We served ours with .... courgette soup.
The soup was very filling and low in calories which offset its higher calorie accompaniment. When making the toastie you'll need less cheese than you think - we used about 25g each (approx 100 cals) of strong cheddar.
The glut of courgettes (zucchini) goes on in our small flower bed. I'm not complaining, as they are all being eaten - friends and family love the round courgettes too.
This recipe was slightly different to my previous attempt at courgette soup (see below). A tablespoon of single cream (15g - just 30 cals) added a luxurious touch, and gave the soup a more velvety texture. The whole lunch came to around 450 calories! Here's the recipe:

SEAFOOD PASTA
You either love seafood or hate it. Here's our SEAFOOD PASTA. Good fresh ingredients are best for this dish.
After a holiday you may find the weight has piled on. We've just returned from our holiday, enjoying the sunshine, food and drink. We also did a lot of sight seeing - or should I say 'walking' - and we think this has helped our weight to remain stable (a balance of calories). We ate very heartily too. When we returned home, we found our weight was more or less stable, which is more than we can say about our (poor and often non-existent) internet service. Hence the lack of posts but I'll attempt to post whenever possible.
I took very few FOOD photographs while away as I was too busy capturing the scenery, but here's the meal we ate when we arrived home. We love shellfish, and even foraged for our own mussels which were sweet and juicy. We brought back lots of fresh seafood, making this pasta dish amazingly fresh. When you have fresh seafood you'll find the texture is incredibly soft. Here's a link to the spicy tomato sauce we used in this dish. Binge all weekend?
The sausages were very meaty - about 95% meat content. Proper sausages!
Often we'll have salads or sandwiches for lunch, but when we've been a bit more active - as I have today - we look for something more substantial. Working in the garden is good exercise, and I would say I must have burned a few hundred calories. Enough to offset the higher calorie lunch than usual.
We aim to eat around 450-500 calories at lunch time. I can well remember when I used to follow restrictive diets where I (frustratingly) tried to survive on 300 calories for lunch, and end up so hungry (and miserable) I would eventually eat anything and quite often - everything in sight.
There was a piece in the Daily Mail today about people who binge all weekend consuming up to 10,000 calories over two days. The article, although extreme, struck a chord with me - as it probably did with many dieters. You've spent all week dieting, then the weekend arrives and you give up. Start your 'diet' on Monday, and by Friday you are so hungry you just want to eat, eat and eat. I then used to promise myself I would 'start a new diet' on Monday - and this gave me justification to carry on eating. This process was repeated year after year after year. I didn't binge like the article though. The weekend becomes a free for all food frenzy. You feel guilty. Who wins in this situation? The diet industry with your repeat business of course - not you.
BUT, there is a way out of this destructive cycle.
We ALL have a calorie allowance. We can eat ALL types of food. That's why OUR METHOD works. We recognised right at the beginning that we loved our WEEKENDS too. It's a time to relax, be with friends and socialise. Even during the week, we allowed ourselves MORE food than most conventional weight loss programmes. Over two years we shed the pounds quite easily, and more importantly we've kept them off. So go on, take a leap of faith, give this method of weight loss a go. What have you got to lose - except weight.

CRISPY FRIED PRAWNS
We ate these CRISPY FRIED PRAWNS as a starter this evening. This time we used fresh, raw prawns which were soft and juicy. The last time we ate these, we used FROZEN prawns, which were equally delicious although they were not quite as soft.
Seek out Panko breadcrumbs, often hiding in the spice aisle of the supermarket, for exceptionally crunchy prawns. We were surprised at how low in calories this dish is too. Take a look at our easy recipe:Smoked trout salad
Today we had smoked trout salad with new potatoes for lunch.
If you are dieting and want to make a real difference to your weight (forever) then why not take a look at our weight loss method. We've managed to lose 7 stone between us, and have kept the weight off without any problems. Our philosophy is to eat ALL foods - nothing banned eg if you love fish and chips - have them. This is what we fancied today. Our meal was under 450 calories and very filling/satisfying.
You can buy pre-packed cooked, smoked trout fillets in the supermarket. Ours came from a Smokery, as we were passing the shop. Smoked trout is quite a subtle tasting fish and makes a nice change from eg smoked salmon. Great with a creamy potato salad, or simply with brown bread and butter.

Stuffed fillet of pork
Stuffed FILLET OF PORK is a tasty yet economical way to feed your guests. The pork is quite bland without flavourings, and this is a delicious way to cook it.
We loved the figs - in season, sweet and juicy - with the pork. But, you can replace these with chunky slices of apple if you prefer.
The sauce is so simple to make, and completes the dish.
Serve with new potatoes, or like us - sauté potatoes and a selection of vegetables. As you can see, our glut of courgettes is ongoing, and we're beginning to wonder when the plants will stop producing... but we're just managing to keep up with them! TEN minute dessert - rhubarb, ginger & orange
Need a little inspiration? How about a dessert, using fresh ingredients, ready in around ten minutes!
We've made rhubarb and custard before, but... using just a few extra ingredients, this humble rhubarb caused a bit of a stir.
Our deliciously easy tip will not only save you money, but you'll have the perfect dessert for you and your guests in no time.
Don't overcook the rhubarb (see below) and enjoy the textures. Here's how the rhubarb looked after its brief cooking spell.
Cost for us was negligible as a friend gave us the rhubarb. But as with all seasonal fruit and vegetables, they are usually cheaper and this dessert will easily feed four at around 50-60p each. Budget slow cooked beef
If you are looking for a really rich and meltingly soft beef dish, why not try BEEF CHEEKS? You can buy these from the butcher - and we estimate one cheek would weigh around 350g AFTER it's been cooked. That's a lot of rich meat - and one cheek was plenty for us to share. However we cooked two at the same time with the intention of making a pie and using some for sandwiches.
The flavour is much stronger than shin of beef, and as a result (we think) you'll find you can't eat quite as much. It's low enough in calories as it is, but because you can't scoff it down quickly (well, you might...), you should end up with a low calorie meal under 500 calories.
We served ours with creamy mashed potatoes and a selection of vegetables this time. If you fancy giving this a try, here's our fabulous recipe: BEEF CHEEKS which we served with wild garlic GNOCCHI and celeriac mash, just a little more special (great if you're entertaining).

BEEF TOMATOES
We've had a bumper crop of tomatoes this year, growing some outside the greenhouse against a sunny wall.
The BEEF TOMATOES have a flavour all of their own and a very soft texture. Each tomato weighed around 500g!
What better way to use them up than with this deliciously simple salad. We treated our prize tomatoes to buffalo mozzarella. A few leaves and some crusty toasted ciabatta is all you need for a quick, flavoursome lunch under 400 calories.
