Open sandwich

I was going to grab a sandwich while out - but decided to grab the bread instead as it looked delicious.
Here's the result at 500 calories: ham, cheese with holes (Jarlsberg), gherkin, crunchy vegetables and my own ORZO pasta. Two decent slices (70g total) of this wonderful bread (a bit like a ciabatta but not so chewy) awaited their fate.
RECIPE: Orzo pasta looks like rice, and takes just 5 minutes to cook. I added some fresh peas (frozen would be ok) and cooked them together. I chopped a small amount of spring onion, celery and red pepper then mixed together with the orzo, one teaspoon of oil, and seasoned with some chopped mint and basil, salt and pepper. The mint really complimented the peas.
I'll admit to eating it all - I was starving because I had left too much space between breakfast and lunch. We always like to have around 5 hours between each meal, any longer then we start thinking about snacks.
