Pork for dinner

We were in a bit of a rush, so wanted something quick. This pork, eggs and scalloped potatoes was all I could think of, and it was easy enough to put together. We cooked the potatoes from raw - frying them in a good tablespoon of olive oil. 150g of scalloped potatoes, 130g pork steak, and egg and side salad amounted to around 550 calories, which is about right for a 'good' dinner.
Remember - eat what you love. If you don't - you'll crave it. Our recipes are based on what we love to eat. For example, we love olive oil on our salads, but if you don't then just replace it with whatever you like. Mayo, salad cream.... anything - just roughly work out the calories and add it to the total. Most of all, don't fret about every last calorie.
