Beef hotpot

The beef hotpot we made earlier this week had been portioned up and the last of it went into the oven today. As we are busy later, we had our 'dinner' at lunch time - or should I say we had the slightly heavier meal of the two.
I prepared some marrow - which was different and the taste/texture took me back to my childhood. There are very few calories in marrow - and just a few in the little bit of butter I added. I cooked this in a covered dish in the microwave for around 5 minutes. Some frozen vegetables completed the meal which is around 500 calories.



METHOD
Our beef and mushroom style hotpot was made using up the leftover Sunday BEEF roast.  We cut the cooked beef into cubes and added to a pot with some finely chopped garlic, a small onion, and 200g of mushrooms. We also chopped a handful of dried mushrooms and soaked them before adding to the pot with a tablespoon of tomato puree and covering with beef stock. This was marinated overnight with a few herbs.
When we were ready to cook, we thickened the beef mixture slightly with a little cornflour, then put into an ovenproof dish, seasoned and topped with quite thickly sliced (raw) potatoes. We cooked (covered in foil) in the oven everything was cooked through and piping hot - around 30-40 minutes, then removed the lid/foil and continued cooking until the potatoes had crisped up.
