Seasonal fruits

Tonight we had Sea Bream (Dorade) - very similar to our previous recipe, but tonight we added some red pepper sauce. Unfortunately the lighting made the dish look awful, so I've given you a link to the last Sea Bream we cooked. The fish dish is quite low in calories - around 400 - so we added a fab dessert.
This dessert came to around 200 calories (including the luxury ice-cream on the side).
We went picking blackberries today, and found some really sweet fruit. As the blackberries were so sweet there was no need to add lots of sugar, and this kept the dish very low in calories. I added just one teaspoon of sugar to the pan.
I also used one large eating apple rather than using cooking apples. The apple was sweet and therefore I didn't need to add extra sugar. We used just one sheet of filo pastry for each dessert (50 calories), cutting it into four, brushing the layers with melted butter and shaping it into a muffin tin. We filled the moulds with the half cooked blackberry and apple mix (which had been stewed in its own juices in a pan for 10 minutes and left to cool slightly). I drained the juice into a separate pan and reduced into a coulis (without adding any icing sugar). Seasonal fruit is often so much sweeter, so less sugar is needed and this helped keep the calories down.
