The weekend

Here's what we ate last night - ok it won't win any prizes for beauty, but nevertheless it was a welcoming dish and served our hunger well. It's one of those easy meals, when we can't think of anything else to make. Yet very satisfying.
Simply layer potatoes and onions into a dish, seasoning as you go along, pour over a mix of (half and half) chicken stock and milk. Don't cover the top layer with the liquid, but dot with butter. I added some minced garlic too. I half cooked it (30 mins) covered with foil, then cooked uncovered, for a further 30 minutes at 180 degrees. We set our cooker for the second half of the cooking process,  and this was ready for us when we returned from the pub. Simple, cheap and tasty - and shows that weight loss can be achieved on a budget. Calories are quite low in this meal at around 400-500.
We fancy a steak tonight - with chips, salad and some braised leeks. Tomorrow we are going to make the slow cooked lamb in red wine again. We use a slow cooker, so we can go about our day while it's cooking away.
