Wednesday's meal plan

Our weight is still heading south. So to spur things along again, we're having a delicious bowl of soup with crusty rolls for lunch. For dinner we're having goat's cheese salad with FIGS and parma HAM (or bacon). Tasty meals, quick to prepare. Our fabulous goat's cheese dressing is really tasty and surprisingly low in calories considering the oomph it has!
It's taken me just 10 minutes to scrub and chop some carrots for our Carrot and Coriander (very easy) soup. We have made a large batch for extra portions.
Just take a bag of carrots and place in a saucepan, cover with water and add some vegetable stock (powder or cubes).  Add a finely diced large onion, garlic (if you like) and a little salt then boil until soft.  Blend everything, test for seasoning - adding salt/pepper to taste, then add some fresh coriander.  Add the coriander bit by bit, tasting as you go along.  If we didn't have fresh coriander we would use dried. Wonderful with a chunk of bread and butter.
