Eggs

A lot of people forget they have eggs in the kitchen... and how they can make a fast (cheap) ready meal. We made a mushroom, cheese (15g)  and onion omelette with salad (dressed in olive oil) at around 400 calories - using three eggs.
If you don't like olive oil - make sure you use what you DO like on your salads - mayo, salad cream etc. It's important to ENJOY your food.
It never ceases to amaze us just how satisfying and tasty the humble omelette is. We like to aim for a slightly higher number of calories at meal times, so usually have this with a slice of toast too! I pre-fried half an onion in a little oil then added the mushrooms before adding to the omelette. The trick with the omelette is to keep it nice and moist, so don't overcook. TIP: We only use eggs, no milk and this keeps it nice and rich. Add a small piece of butter to the frying pan before adding the eggs.
Unlike a lot of 'diets' out there, we are not afraid to use oil and butter - it all adds to the flavour and we make sure we count it into our daily calorie allowance.
