Pork stir-fry

PORK STIR-FRY
It's Friday night - and we're off to the pub. We know we'll be hungry later despite eating our sandwich before we go. So what better that this fabulous, quick and easy stir fry. Not only is it super tasty and very satisfying, but it's an unbelievable 300 calories per portion. Here's our fabulous recipe:

Ingredients (serves 2)
200g tenderloin of pork 
small piece of fresh ginger
clove garlic
vegetable oil
soy sauce
stir fry sauce
sesame seeds
1 pack of stir fry vegetables
1 portion of egg noodles (i.e. half pack each)

MARINATE the pork. Slice pork into rounds, place in the mixture of stir fry and soy sauce. Leave for at least half an hour.
Cook the noodles according to the packet and set aside.
Chop the ginger and garlic and slowly cook in the oil in the pan. Do not let the garlic go brown or it will be bitter. This should take just a few minutes - and will flavour the oil. Remove the garlic and ginger from the pan and discard. Turn up the heat to as high as you can go and cook the pork. The length of cooking time will depend upon the thickness of the pork.
Remove pork and set aside to rest while you cook the stir fry vegetables and cook for a few minutes - adding a little extra soy sauce.
Add the noodles to the pan to heat through - then add back the pork. Give everything a good mix.
Serve, sprinkled with sesame seeds.
