TAKE ONE CHICKEN ...

Chicken, leek & potato bake
Planning ahead allows us to budget wisely. Food is ever more expensive - but weight loss doesn't have to be!
One chicken has gone a long way this week - we spent £4.50 and have enjoyed lots of main meals.
We took the chicken apart, using a sharp knife and created lots of meals. It's surprising just how much breast meat (650g) we found on our chicken.
See just how many main meals we made from a single whole chicken:
Cajun chicken

  • Harissa chicken (using the leg meat) - see our earlier post this week
  • Spicy cajun chicken breast 
  • Chicken and leek bake (using remaining breast meat)
  • Chicken carcass/wings - these are in the freezer and we'll be making a tasty soup later
Take a look at our recipe for LEEK & POTATO bake with a twist - we swapped the chorizo for a little (browned) chicken breast, and seasoned with sage and thyme. 
Never throw away the chicken carcass - if you do nothing else, just cover with water, bring to the boil and simmer for an hour. Reduce the liquid down and you'll end up with a delicious chicken soup. Why not look at some of our CHICKEN SOUP recipes? 
REMEMBER: We all have a calorie allowance - and we like to post our main meals to show you what we are eating. You won’t find us posting every last morsel though – but we hope this gives you an idea of how far calories can go!
