Although I followed the cake recipe, I made a slightly different butter cream icing. Instead of mascarpone, I used cream cheese.
The cake was beautifully moist with a soft, crumbly texture. It was slightly more dense than your every day sponge cake, although not stodgy. The home made candied peel was very refreshing too. If you ever fancy a nice cup of tea and a slice of cake, then this is definitely one to try.
