SPICY VEGETABLE SAMOSA

PEA, CAULIFLOWER AND POTATO SAMOSA.
Deliciously spicy, light and delicate. These are not difficult to make, just a bit fiddly. But the results are pretty amazing - especially when served with a cucumber raita. This was our first attempt too - and everyone tucked in, with a lot of mm's going round.
inside a samosa, peas, cauliflower and potatoHere's what the inside of our samosa looked like - so tasty we had to stop ourselves from sampling it. We thought the mixture was so nice that it would make a lovely spicy side dish, or starter all on its own.
If you're looking for a party snack that won't break the bank, then this is one to try. We made 12 samosas with just a small amount of ingredients (see below). Each filo pastry sheet will make 3 samosas. Even with the melted butter, we worked out each samosa at around 60 calories each. Some of the fat runs out during the baking process which also helps the end result being a very light and crispy samosa. Wonderful.
Increase the quantity of ingredients to suit the number of samosas you need.

SPICY VEGETABLE SAMOSA
Ingredients
Makes around 12
1 medium chopped onion
2 large cauliflower florets
1 medium potato cut into small chunks
2 tablespoons of peas
(the above ingredients were roughly equal amounts)
teaspoon of hot curry powder
1 garlic clove, crushed
1 cm fresh ginger, grated
salt and pepper to taste

butter

Fry the onions in a little oil until softened.

Dice potatoes into small chunks and chop the cauliflower into small dice. 

Add potatoes and cook for 5 minutes. 

Add cauliflower, garlic, ginger and curry powder to the frying pan.

Cook on a low heat until vegetables are soft. 

Add peas, stir through and taste before seasoning with salt and pepper. 

Open filo sheets and cut lengthways into strips (thirds).

Use one filo strip per samosa. Brush lightly with melted butter then add a spoonful of the mixture before folding into triangles. Brush again with butter to seal. 

Bake in a hot oven (180ÂșC - fan) for around 20 minutes, or until nicely browned and crisp.
