Slow cooked beef

We love the budget cuts of meat - they have a lot of flavour. This BBQ BRISKET OF BEEF is no exception - and is one of our favourite cuts of meat. Cooking the beef slowly results in a very tender and juicy piece of meat. Most of the fat is drawn out of the meat too.
Over the weekend, we decided to try a different method of cooking the beef. We weren't disappointed with the results either. Usually we cook slowly in the oven for 3 to 4 hours on a low heat.

This time, we began by cooking the beef in a slow cooker overnight. Then, when we were ready to eat later, we put the cooked beef into a hot oven (while the potatoes were roasting) until it was thoroughly reheated. This gave the beef a delicious crust.
It would make an easy dinner party dish - as you have prepared the main dish beforehand.
It's been well over 3 years since we lost weight with our weight loss plan, and we're still keeping the weight off. We carried on eating dishes like this, and never deprived ourselves of anything we fancied. So many diets forbid you to eat something you have eaten for years - and you end up missing that particular food. Yo-yo dieting is a thing of the past now.

BBQ BRISKET OF BEEF
Ingredients (serves 4-6)
1.25 kg brisket of beef
Then one teaspoon of each: 
smoked paprika 
ordinary paprika 
cumin 
dried thyme 
salt and pepper
potatoes (we used King Edwards - fluffy on the inside, crunchy on the outside)

Begin by dry rubbing the brisket with the spices. 

In the UK we often find the brisket of beef rolled and ready for pot roasting, so unroll the beef before rubbing in the spices.

Place the beef into the slow cooker, add some water and cook until soft - either over night or 6 - 8 hours. We added 250ml water to our pot.

Leave the beef to cool in its own liquid to help retain the moisture. Keep in refrigerator until required. 

When ready to eat, heat oven to 180ÂșC, and place the beef onto an ovenproof dish. Cook until piping hot. Do this at the same time as the roast potatoes (if using).
