Rainy Wednesday 200 calorie lunch idea...

I can't believe the rain!! Anyone would think summer was just a gap in the clouds... so what better than this really filling soup?
A minestrone (of sorts) - with ham , cannellini beans, potatoes and a selection of other vegetables. Oh, and a couple of crunchy massive dipping croutons.
This time I bought some dried beans and soaked them overnight as it's much cheaper. Here's my SOUP RECIPE which can be adapted to suit anyone's taste. I would also make this without ham, as it's just as tasty. At around 200 calories per large serving, it's great topped with a generous sprinkle of cheese. We chosen slices of toasted ciabatta, or my other favourite is a large crusty (cheese) roll on the side - to bring the calorie content up to a more satisfying number!
