Chicken & mushroom casserole

Chicken & mushroom casseroleHere's what we ate last night - chicken and mushroom casserole. Are you dieting and not eating all your favourite food? 
Every meal we post here has been devoured by us - while losing weight. We work out a rough calorie count for our meals and follow this UNIQUE METHOD of weight loss. We've been able to eat heartily and lose 7 stone between us. 
We've been keeping the weight off too because we've empowered ourselves with the knowledge to do so.

The most surprising thing people say to us is they do not believe you can eat like this - while losing weight. If you are stuck in a 'diet' mindset that's not working for you, then take a look at how we changed the way we thought, and won the weight loss battle. 
This is a great easy going recipe - turning everyday chicken into something luxurious. If you want to impress your family without having to hover around the kitchen, then why not try this dish. I would estimate this dish at between 550-600 calories. A comforting, rustic midweek choice which never fails to please. Here's our recipe:

CHICKEN & MUSHROOM CASSEROLE (serves 4)
4 chicken legs
200g chestnut mushrooms - sliced
1 onion or the equivalent in shallots (we used 3 small shallots) - finely chopped
couple of cloves of garlic - minced
bay leaf - optional
tablespoon of mushroom ketchup (optional)
tsp dried tarragon 
one or two large glasses of red wine
half a litre of stock

Brown the meat pieces - removed excess skin. Keep some of the skin to help retain the moisture. Remove from the pan.

Sweat onion/shallot in the pan until soft, add garlic then cook for a couple more minutes. 

Add the wine and reduce this to half. 

Place the browned chicken pieces in an ovenproof casserole dish.

Add the stock, wine reduction and onions.

Add HALF the mushrooms and tarragon.

Cover and cook at 140ºC for an hour then remove lid and turn the oven up to 170ºC.

Add the remaining sliced mushrooms. Cook for a further 15-30 minutes or until the chicken has a nice colour.

Once cooked, remove liquid, strain the fat and reduce this to desired consistency (probably by half). 

Just before serving, add some chopped parsley, and season to taste.
