It's a wonderful zesty, spicy and fresh starter.
Unlike black pudding, white pudding has a meatier texture: it's made of pork and has lots of spice which works well with the scallops.
This starter won't break the calorie bank either. Such a lovely combination and worth trying. Here's our recipe:
SCALLOPS WITH WHITE PUDDING
Serves two
Ingredients
6 fresh scallops
100g white pudding
fresh salad leaves
one apple
zest of half a lemon
juice of half a lemon
oil/butter
salt/pepper

Peel apple and cut half into matchsticks. Place in lemon juice.
Grate the other half of the apple into a bowl. Add a teaspoon of lemon juice. Add one tablespoon of olive (or other) oil. Stir and add salt and pepper to your taste.
Cut the white pudding into thin slices and fry until cooked through. Cut into rough chunks.
Combine the dressing with the salad leaves.
Fry the scallops in oil and a little butter. These will take around a minute on each side. If you overcook they will be rubbery.
Assemble the salad - crumble the white pudding onto the dressed salad leave, add the scallops and top with the apple matchsticks.
