Courgette (zucchini) soup - 200 calories

We were pleasantly surprised at just how delicate and fresh this COURGETTE (ZUCCHINI) SOUP tasted. The goat's cheese helped create the velvety texture.
I wondered what to do with the crop of round courgettes making their way across our garden. We planted a few seeds in the border, next to the roses, and can't quite believe the result. If you're looking to grow just one vegetable without too much bother - this is the one.
If buying fresh, then any vegetable - in season - is so much tastier and cheaper too.
Apart from anything else, the courgette is very low in calories at just 17 calories per 100g.
I was going to make a pasta dish and use grated courgette, but thought I would give this soup a try.
We were both really impressed and will be making it again. I would imagine it's also very tasty served cold on a very hot day.

Goat's cheese, avocado and bacon

This was a really satisfying lunch - goat's cheese with avocado and bacon bits. The lemon dressing recipe is here.
Using 50g each of goat's cheese and avocado, 2 rashers of streaky bacon (crumbled) plus the lemon dressing, our salad works out around 450 calories. All that flavour for so few calories is amazing. We served ours with some rye bread on the side.
The type of GOAT"S CHEESE we used has a rind and one of the large discount supermarkets has a very tasty one!
Buying a ripe AVOCADO can be hit and miss for me, so now I buy them a few days ahead. Today we enjoyed a perfectly ripe Fuerte avocado (pale green) - after it had been sitting on my kitchen windowsill for a while. Sometimes we will buy a Hass (nobbly) avocado, and found the darker the skin the more ripe it is.
Cook the rashers through until all the fat has drained out. You may find one rasher is enough as it is quite salty.

LOW CALORIE MEALS

CHEESE ON TOAST - using goat's cheese! Serve this delicious goat's cheese salad with hot bacon and red peppers for a low calorie lunch packed with flavour. I estimate this dish at around 400-450 calories.

GOAT'S CHEESE TOAST SALAD
Ingredients - serves one
60g goat's cheese 
3 slices french stick 
half a red pepper - cut into strips
2 slices of streaky bacon
salad leaves
tomatoes
slices of red onion 
olive oil (if using to dress salad)
balsamic vinegar or syrup - if using
salt and pepper

If you don't have a french stick, you could use ordinary white bread. Cut out some round shapes using a pastry cutter, and make them slightly larger than the diameter of the cheese.
Begin by heating up a dry frying pan and very slowly cook the bacon. Slow cooking will draw out most of the fat. Place the red pepper in the frying pan and cook until soft.
Toast one side of the bread then place the slices of goat's cheese on the other side and return to the grill. Cook just long enough for the cheese to begin to melt.
Season your salad/tomatoes/onion with salt and pepper, as it will enhance the flavours. Dress the salad with olive oil and balsamic (if using). You could top the cheese with a little red onion chutney too.
Arrange the bacon and peppers on the salad and serve.

EAT the food you love - like we do and forget dieting. You'll feel more satisfied and it may just stop you snacking or craving something you feel you deserve.

Saturday's meal ideas

For lunch we had this tasty soft goat's cheese, bacon and beetroot salad. It is one of our favourite salads, and we make it quite often.
I made a dressing using vegetable oil, English mustard and white wine vinegar, then seasoned well with salt and pepper. I may have used olive oil and lemon juice if I didn't happen to have some mustard handy.
With bread this meal comes to around 500 calories.
Tonight we plan to have tandoori style chicken. We're making our own spice mix for a change, just to see how it turns out. We normally use a tandoori PASTE, which can be found on most supermarket shelves.

Wednesday cheese & ham salad

For this 450 calorie dish, we used 60g of goat's cheese and divided it into 3 discs, wrapping each in some parma ham. I cooked this in a hot oven (200 degrees) for around 10 minutes. The cheese was nicely melted and the parma ham crispy. It was served on a bed of salad with a sprinkle of pine nuts.

TIP: Dress salad lightly with oil and season well. Watch out for the pine-nuts, as they come in at a whopping 175 calories per 25g!  Our sprinkle weighed in at just 5g each - costing us 35 calories.
