PORK - quick and easy recipe

Pork tenderloin is a great meat to use for stir frying. As its name suggests, it is very tender and cooks quickly. We usually buy a ready chopped pack of stir fry vegetables, because you get water chestnuts and bamboo shoots which are expensive to buy on their own. If you think you're going to be really hungry, add some egg noodles too.
As we were going out we grabbed a quick sandwich beforehand, and on our return we cooked this. No need to stop at the fish and chip shop on the way home!
Here's our pork stir fry recipe. It may stop you heading for the take away too. This plateful comes to around 300 calories - here's our recipe:

Ingredients (serves 2)
300g tenderloin of pork 
small piece of fresh ginger
clove garlic
vegetable oil
soy sauce
stir fry sauce
sesame seeds
1 pack of stir fry vegetables
1 pack of bean sprouts

MARINATE the pork. Slice pork into rounds, place in the mixture of stir fry (or hoisin) and soy sauce. Leave for at least half an hour.
Chop the ginger and garlic and slowly cook in the oil in the pan. Do not let the garlic go brown or it will be bitter. This should take just a few minutes - and will flavour the oil. REMOVE the garlic and ginger from the pan and discard. 
Turn up the heat to as high as you can go and stir fry the pork. The length of cooking time will depend upon the thickness of the pork.
Remove pork and set aside to rest while you cook the stir fry vegetables. Cook for a few minutes - adding a little extra soy sauce then add back the pork. Give everything a good mix.

ADD some cooked egg noodles to bulk out your meal and fill you up! We had already eaten some sandwiches before we went out, so were not that hungry this time.
