Takeaway chicken

SPICY BAKED CHICKEN IN BREADCRUMBS
The flavour of this chicken coating was as close as we could get to takeaway fried chicken - without frying anything!
The chicken and sweetcorn were cooked in the oven.
We posted the BBQ bean recipe yesterday - and would recommend you give this a try. You can make it at a fraction of the cost of its commercial equivalent. Why not feed your family for less!
The chicken had a very punchy flavour - close to a popular brand on the high street.
We estimate the whole meal (including our fabulous home made chips) at around 600 calories less than the takeaway deep fried equivalent. See how quick and easy it was to prepare and make:

SPICY CHICKEN

Ingredients
350g chicken fillets
two teaspoons of plain flour or cornflour
one beaten egg
around 3 - 4 slices of bread
SPICE INGREDIENTS
half teaspoon each of:
paprika
smoked paprika
cumin
salt
pepper
garlic powder
dried thyme

Heat the oven to 180ÂșC.

Mix the dry spice ingredients together.

Take one teaspoon of the dry spice mix, stir into the flour and place in a large plastic bag.

Put the chicken fillets into the plastic bag and shake until all the chicken is coated.

Place the bread (crusts removed) into a blender and whizz into breadcrumbs.

Dip the chicken into the beaten egg then roll in the breadcrumbs.

Place onto an oiled baking tray. Spray the top of the chicken with oil too.

Heat the baking tray on the hob. Cook the chicken for a minute on each side to get the cooking process started.

Place chicken in a hot oven for 5 - 6 minutes depending on the thickness of the chicken. We were surprised at how quickly these took to cook in the oven. Check the fillets are cooked by cutting into the thickest part of the chicken.
