Takeaway chicken

SPICY BAKED CHICKEN IN BREADCRUMBS
The flavour of this chicken coating was as close as we could get to takeaway fried chicken - without frying anything!
The chicken and sweetcorn were cooked in the oven.
We posted the BBQ bean recipe yesterday - and would recommend you give this a try. You can make it at a fraction of the cost of its commercial equivalent. Why not feed your family for less!
The chicken had a very punchy flavour - close to a popular brand on the high street.
We estimate the whole meal (including our fabulous home made chips) at around 600 calories less than the takeaway deep fried equivalent. See how quick and easy it was to prepare and make:

SMOKY BBQ BEANS
We decided to create our own chicken takeaway meal tonight.
Who wouldn't love chicken in breadcrumbs with this really intense side of SMOKY BBQ BEANS.
The beans added that little kick which chicken often needs because it can be so bland.
The side dish was quick and easy to prepare and there was enough to feed an army! So if you're having a party, this will prove very economical (and sought after). We're not sure what we enjoyed the most …. the beans or the chicken. You tell us.
The beans are very low in calories and certainly complimented the rest of the meal. As a side dish this will easily serve four to six guests - here's the recipe:

Spicy BBQ beef ball in breadcrumbs

BBQ BEEF BALL IN BREADCRUMBS
This little morsel - BBQ beef in breadcrumbs -was a bit of a showstopper. We wanted to add a little texture and crunch to our dining experience, where we were cooking 'beef three ways'.
The beef ball recipe although experimental, turned into one of the finer elements on the plate.
Our guests were more than impressed and so were we! The beef ball was placed ceremoniously on a bed of sweet onion puree (I'll post that recipe later) and helped balance the whole plate.
Everyone wanted to know how to make them. We had searched for something akin online, and found nothing, so we came up with our own recipe.
They would certainly work as appetisers on their own. Here's our recipe:

BBQ side dishes & ideas

Here are FOUR of our favourite BBQ sauces. It'll give you some idea of what we're eating this weekend too.
It's usually the little bits on the side that make a great barbeque.
1)  This easy GUACAMOLE was so refreshing and made good use of my over ripe avocado.
GUACAMOLE Ingredients: Blend one avocado, juice of half a lime, half a small red chilli and a little red onion. Season with salt and pepper and add a little olive oil to loosen the mixture. Love that hint of spice!

RAITA SAUCE

A cool, fresh RAITA sauce is delicious with barbecued meat (as well as curry). Why not try our quick and easy recipe? Despite its creamy texture, this raita is low in calories too.
This weekend we ate mostly outdoors. It's been a long time since we've enjoyed a whole weekend of sunshine.
The raita was perfect for our home made beef burgers. If you want a meaty burger why not make your own. Our RECIPE is very quick and easy.

SMOKY BBQ PORK SPARE RIBS

These PORK SPARE RIBS disappeared in no time over the Bank Holiday weekend. 
To ensure your spare ribs are tender, simmer them for 30-40 minutes before marinating them in this rich BBQ sauce.
Why not try our recipe below. We're sure you will really enjoy the freshness of the sauce which will liven up whatever meat you are eating! They work equally as well cooked in the oven.

BBQ PORK SHOULDER

This slow cooked pork shoulder was very easy to make and leaves you twiddling your thumbs rather than running around the kitchen coordinating the usual Sunday roast. So why not relax, slow cook the fat out of the meat and enjoy this succulent, tasty pork dish.
Quite often we will use belly of pork which is also very tasty, but today we opted for pork shoulder. We rubbed the (dried) pork skin with the following spices: one teaspoon each of smoked paprika, ordinary paprika, cumin, thyme, salt and black pepper.
Let it marinate for a couple of hours (or overnight) then place in the oven covered in foil at 140ºC. Remove the foil for the last hour and turn up the heat to 180ºC. To get the crackling nice and crunchy, remove the skin from the pork and return to the oven until crisp.
We cooked our 1.5kg of pork for 4 hours in total.

FULLY LOADED - BBQ SPARE RIBS

After joining friends in the pub, we came back to these delicious fully loaded BBQ spare ribs. It wasn't our fault - it was the butchers. He didn't have the shin of beef we wanted, but suggested the belly of pork instead - which came with the ribs attached. We decided to boil the ribs for 40 minutes then coat them in a BBQ sauce, you can make your own (like we did - see below) or buy a packet. Tomorrow we are now having the belly of pork cooked a different way.
Supermarkets sell these ribs at a premium price, yet they are 'free' if you ask the butcher to remove them (because you have already paid for them when they weigh the pork belly). Braising them first makes them oh so tender... don't just smother them in sauce and hope for the best.
Here's our recipe for smoky BBQ sauce: One teaspoon of smoked paprika and cumin, 2 small cloves garlic 2 teaspoons soy sauce, a glug of tomato ketchup, 10-15ml honey, black pepper and one onion. Blend together and smother whatever it is that needs smothering. We braised our pork ribs for 40 minutes then smothered them with the bbq sauce. Return to a hot oven until nice and crispy! Delicious as a first course. I have to say that the 'clean' taste of freshly made bbq sauce added to the enjoyment. We shared these, and we thoroughly enjoyed them. I'm not sure about the calories but it is Saturday and we do have a FULL calorie allowance to play with in whatever way we choose. Eating what we enjoy is part of the secret to our weight loss.
