Bacon and avocado - are perfect together; a salty, creamy fusion balanced with the crunch of the lightly fried ciabatta.
I added a few pea shoots (from the garden) to the spinach. The dressing gave it the 'final touch'. We are experimenting more and more with fresh, home made salad dressings (which really make a dish) and here's the one we used today:
How to make the mustard dressing: Use (3 parts) olive oil, (1 part) red wine vinegar a small amount of wholegrain mustard (to taste) and salt/pepper. Whisk and you're done.
I imagine this salad is somewhere in the region of 500 calories.
