Budget roast chicken

Oh the English weather!! One minute we're basking in sunshine and and the next it's ten degrees cooler.
After two days munching on barbequed bits and pieces, we felt the need for some vegetables. So it was roast chicken today. I bought in season spring greens, which are so sweet and delicate.
BUDGET TIP:
Why not buy a slightly larger whole chicken and cut it in half. I'm sure a good supermarket or butcher would oblige if you ask them. You save money roasting half a bird - and if you are busy, it doesn't take as long to cook. Then you get to make another new meal with the rest.
Here's HOW TO ROAST CHICKEN (and make tasty gravy) - which has never failed to provide a succulent result. I would recommend buying a small thermometer for checking the temperature rather than guessing when it's cooked. You'll be amazed at just how tasty the gravy is, and you won't even need a stock cube either.
You'll find this sort of meal comes in at around 400 calories with all those steamed vegetables. And if you've enjoyed a Bank Holiday like we have, then this will go some way to making amends!
