Feta salad with croutons

The weather calls for more salads, which are very hydrating and as we near a heat wave - very welcoming.
This simple flavour packed FETA SALAD with CROUTONS is around 400 calories. I forgot to add the avocado, which would have increased the number of calories and been more filling. We generally like to eat around 450-500 calories at lunch time.
You have the garlic crunch of the croutons balancing nicely with the juicy tomatoes and peppery leaves.
I was given some broad beans today, and these go really well with feta.  We can vouch for that, as we really enjoyed this delicious BROAD BEAN, FETA & MINT TOAST recipe.
Since trying various oil based salads, we have become a fan of this type of dressing. But, if you prefer something else, then use that instead - just take a moment to find out the calorific value of your dressing. You are in control of your own weight loss, we are here to hopefully give you some great recipe ideas. Here's our feta salad recipe:

FETA SALAD WITH CROUTONS
Ingredients (serves 2)
100g feta cheese
100g crusty bread or ciabatta
garlic clove
oil
1 or 2 very ripe tomatoes
cucumber - cubed
bag of mixed salad leaves
Dressing
half tsp wholegrain mustard
half tsp honey
1 tsp white wine vinegar
3 tsp oil
pinch salt/pepper
1 tsp water

Mix the salad dressing together and give it a good whisk. Store in the fridge until required.

Cube the tomatoes and cucumber, place in a bowl and pour over a little of the dressing, salt and pepper. Leave to marinate while the bread is cooking. This will allow time for the juices to escape.

Cut the garlic clove in half and rub over the sliced bread. Cube the bread and toss in a little oil. You could use an oil spray. Place onto a lightly oiled baking tray. Bake in a hot oven (180ยบ C) and cook until crisp (around 5-10 mins).

Assemble your salad - add the cubed feta to the tomatoes and cucumber, mix in the salad leaves and warm bread. Add the rest of the dressing and give everything a good mix.
