Lunch on the run!
Now here's a little cheat's way of making a very good salad. It's around 450 calories - but you could make it meat-free and perhaps swap the meat for some crunchy toasted croutons instead? How easy is this salad to make!
I mixed half a tub of pasta bows, spinach and pine nuts with some rocket, spinach and watercress salad.
As pine nuts are so expensive, and you may not use all of them, this is a nice way to enjoy them. There was enough oil in the tub of pasta to adequately coat the salad leaves too.
I had a little chicken breast to use up, and I was going to have some avocado. I don't know about you, but the avocados always seem to be unripe so I left it out. I found a very small chorizo flavoured sausage hanging around so used that instead. (There's a hint of what's going into my slow cooked dish later). A fine grating of parmesan and we're ready to eat.
I wasn't sure how much I would enjoy this - but on a scale of 1 to 10 I would give it a very tasty 9.
Sausages and salad! Yes, you may think it's a bit strange, but why not give it a try? Buy a good quality sausage and next time you cook them, save one for slicing up and adding to your salad.
