Celeriac Slaw

Celeriac slaw, Ottolenghi style
We often make our own COLESLAW but today we wanted to try a new ingredient: CELERIAC.
The salad was inspired by Ottolenghi although I couldn't find his recipe.
I know BARBERRIES are used in the salad, but we couldn't find any, so I substituted them with another ingredient.
The end result was very tasty - and this would go well with something like buffalo wings.
I was really impressed by the texture of the celeriac and think I might even prefer it to white cabbage. Here's the recipe:

CELERIAC SLAW
Ingredients
Serves 2
1/4 of celeriac
1/2 an apple
one small shallot (or red onion)
dried cherries 
one teaspoon plain yoghurt
one teaspoon mayonnaise
fresh flat leaf parsley
fresh mint
lemon juice 
za'atar - or fresh thyme and a little grated lemon zest
salt and pepper

Cut the celeriac and apple into small julienne. Place in a bowl of water containing a few drops of lemon juice while sorting out the rest of the ingredients:

Cut the dried cherries - I used scissors - into small slices. 

Thinly slice the shallot or red onion.

Chop a few sprigs of parsley and mint.

Mix the yoghurt and mayonnaise together.

Remove the celeriac and apple. Add the yoghurt mixture, shallot and herbs. Mix everything together.

Sprinkle some za'atar (if using) - we added about 1/4 teaspoon. 

Add the cherries.

Taste and season with a little salt and pepper if you think it needs it.
