Thrifty pork and lamb

Here's what we ate last night for dinner. We enjoyed it so much on Saturday. Not wishing to waste the tasty spring cabbage, or the rest of the apple sauce, we ate it all over again! But, if you look closely enough, you'll spot the difference. Some things we keep to the weekend. Can you see it? After a salmon sandwich at lunch time, we're having something out of the freezer later. We love testing recipes for their freezer 'stamina' - and we'll be giving our marks out of 10 for this dish later!
Just a reminder of how we made the delicious APPLE SAUCE - just use a couple of eating apples and chop these into a saucepan with a little water. Cook until soft, then add some apple brandy if you have any to give it a zing. Blend together. TIP: because you are not using cooking apples there is no need to add sugar.
And I'm sure you spotted it - but we didn't have any PORK CRACKLING or roast potatoes last night. These certainly make a difference to the calorie content.
Some time ago we cooked slow braised lamb in red wine and froze a portion. It was absolutely delicious and in our opinion, just as tasty as lamb shanks yet more economical. Why not try this recipe and see for yourself. We're eating this tonight for dinner, with broccoli and mash. We froze the lamb and sauce separately - and the portion of lamb was a lot smaller. So, we estimate our dinner tonight at around 550-600 calories. Can't wait to see what it turns out like.
