After a great weekend of celebrations, we began our 4 good days with a really tasty beef salad, with horseradish potato salad.
We each had 50g of cold roast beef which is surprisingly very low in calories, 120g of potato salad, a tablespoon of red onion marmalade and a slice of bread. I mixed 2 teaspoons of full fat mayonnaise with enough horseradish sauce to give it a sharpness (adding little by little). I then added some full fat greek yoghurt to bulk it out. This meal came to under 450 calories (including the small slice of bread). The red onion marmalade gave it a nice twist too.
Remember - eat what you love. If you don't - you'll crave it. Our recipes are based on what we love eating. For example, we love olive oil on our salads, but if you don't then just replace it with whatever you like. Mayo, salad cream.... anything - just roughly work out the calories and add it to the total. Most of all, don't fret about every last calorie.
