Fresh eggs. That's the secret. As I'll be baking this weekend - I took a trip to the local farm. Our spinach, poached eggs, bacon, cheese and toast. Drizzled with a little olive oil and a scattering of toasted pine nuts, this came to under 500 calories. It was delicious and hit the spot.
