We finally made it ... and had this double lamb chop for dinner. We estimate the dish to be no more than 600 calories (and that's over-estimating). The actual lean meat from this chop was 120g.
It was juicy and tender, and lovely and pink in the middle.
TIP: We achieved the pinkness without the juices running on the plate, by first frying the chops until almost cooked then removing from the pan and letting them rest. Ours were rested for 6 minutes, while we were dishing up the vegetables, then we put them back into the pan to crisp them up for a minute or so either side.
